Not in this version.  Because of the word count limitation, I had to remove a lot of mechanics.  The difference between gunslingers and gamblers did not survive.  But I still feel the color of the different character types will give the players a big enough springboard to make them different.

To save even more time, why don't you just make three character sheets. One for Gunslingers, One for Gamblers, and one for Doctors. Give them a list of appropriate feats and have them circle a few. That would speed up the onerous character creation process.

All of this would have been really good if I had the time. I'm actually out of town right now, and unable to put any significant time into game design.  But yeah, when I go to expand this game, these are all brilliant suggestions that I will make every effort to incorperate! :)

Giving the character to the GM has a very old school feel to it.  Turning a player from an ally to an adversary is awesome, but not in the flavor I am looking to capture.  Plus, if there is a TPK (and I imagine there will be), what then?  I think letting the GM have some fun with a character is cool.  What I need to do, though, is figure out some way to redeem a zombie character.  I think that might add a fun element to the game.

If there is a TPK, then you get to follow around a bunch of zombies and their antics for a while until they accidentally drown themselves in a deep ditch or are killed by another monster. Hilarious! Anyway, I understand that you are going for a different feel.

That does sound like a fun game.   The GM could even introduce other heroes for the zombie PCs to fight.  Maybe someone else will pick it up and run with that idea!
